Coconut Chicken With Sweet Peanut Dipping Sauce

Ingredients

  • 200g chicken breast fillet

  • 100g basmati rice

  • 31ml coconut milk

  • 1/2 tbsp dark brown sugar

  • 21ml lime juice

  • 1/2 tbsp ginger paste

  • 1/4 tbsp garlic paste

  • 1/2 tsp curry powder

  • 20g peanut butter

  • 1 fresh lime

  • olive oil (for cooking)

  • 10g peanuts (garnish)

  • coconut flakes (garnish)

  • chopped coriander (garnish)

Instructions

  1. Put your rice on to cook, this should take 15-20 minutes. The rest of the dish should be done by the time it has finished cooking

  2. Combine the coconut milk, soy sauce, palm sugar, lime juice, ginger, garlic and curry powder in a jug. Mix well, then pour half the mixture over the chicken in a bowl

  3. Place a pan over a high heat until smoking hot. Brush the pan with olive oil, then chop the chicken and add the chicken pieces. Cook over a high heat for 6-8 minutes, turning occasionally, until caramelised and cooked through.

  4. Add the peanut butter to the reserved marinade and mix until smooth.

  5. Place the cooked rice on a plate then add the chicken. Pour the sauce over to taste, then top with the garnishes and finishing by squeezing the lime juice over the dish. Enjoy :)
