Ingredients

  • 12 Pork Ribs 🍖

  • Salt 🧂

  • 2 tsp Black Peppercorns

  • 1-2 Spring Onions (to garnish)

    225g rice (75g per serving)

    Marinade:

  • 2tbsp Sesame Oil

  • 4tbsp Dark Soy

  • 4tbsp Runny Honey

  • 6tbsp Teriyaki Sauce

  • 1tsp Five-Spice Powder

  • Juice of 2 Limes

  • Pinch of Dried Chilli Flakes

Instructions

Traditional Method:

  1. Put the rack of ribs in a large heavy-based pan and cover with water. Season with salt and add the peppercorns.

  2. Bring to boil then reduce to simmer with a partially covered lid.

  3. Cook for 1-1.5 hours until the meat starts to come away from the bone. Remove the ribs and set aside until they are cool enough to handle. Whilst you wait mix together the marinade in a bowl.

  4. Preheat the oven to 160C.

  5. Chop the rack into individual ribs if they are not already separate. Put them in a large flameproof casserole and pour over the marinade then turn the ribs to coat. Cover with the lid and put in the oven for an hour - keep an eye on them so they don’t dry out and turn in the marinade if needed. 20 minutes before the ribs are done put your rice on to cook and chop up your spring onions.

  6. When the ribs are done serve them with the rice and spring onions. Enjoy :)

Slow Cooker:

  1. Chop the rack into separate ribs and season with the salt and peppercorns then place the meat in the slow cooker.

  2. In a bowl mix together the marinade ingredients, then add to the slow cooker coating the ribs.

  3. Cover the slow cooker with a lid and cook on a low heat for 8 hours. 20 minutes before the ribs are done put your rice on to cook and chop up your spring onions.

  4. When the ribs are done serve them with the rice and spring onions. Enjoy :)
