Ingredients

  • 250g chorizo

  • 5 garlic cloves

  • 2 onions

  • 2 red peppers

  • 400g tinned chopped tomatos

  • 80ml olive oil

  • 1200g baking potato

  • 1/2 tbsp paprika

  • 2 sprigs of rosemary

  • 2 bay leaves

  • 2 slices of bread (optional = 240 calories, which is included in the total above)

  • vinegar

Instructions

  1. Thinly slice the garlic, onion and pepper and add to a hot pan with olive oil. They should cook for 10 minutes until soft.

  2. Peel the skin off your chorizo, then chop it into small slices and add to the pan as well the chopped tomatoes, paprika and bay leaves. Cook for 5 minutes.

  3. Now peel the potatoes then chop them. When chopping you want to crack the potatoes so they release the starch. The slices should be slightly jagged and bumpy rather than smooth.

  4. Add the potatoes, rosemary, 2 litres of water, salt to taste and a couple of drops of vinegar to the pan and stir.

  5. Bring the stew to boil and then let it simmer until the potatoes have cooked and softened and the sauce itself has thickened. This should take 30 minutes to 1 hour.

  6. Finally serve with the bread. Enjoy :)
