Hot & Sour Apple Crispy Pork Noodles

Ingredients

  • 145g egg noodles

  • 250g boneless pork belly - cut into 3-4cm pieces

  • 1 fresh lime to garnish cut into quarters

  • 1 spring onions finely sliced

  • 1/2 fresh red chilli de-seeded and finely sliced

  • Fresh coriander leaves to garnish

  • Salt & pepper

  • Sunflower or vegetable oil

    The Marinade

  • 2 tbsp soy sauce

  • 1/2 tsp five spice

  • 2 tbsp runny honey

  • 200g apple cut into chunks

  • 1 fresh red chilli

  • 1 thumb size piece of fresh ginger peeled & roughly chopped

  • 2 garlic cloves peeled

Instructions

  1. Preheat the oven to 180C.

  2. Take the pork out the fridge 30mins before cooking.

  3. Season with salt and pepper and place in a roasting tin.

  4. Put all the marinading ingredients in a blender until it’s a paste.

  5. Spread the marinade over the pork with a wineglass of water.

  6. Seal the tin with foil and place in oven for 1 hour 30.

  7. Heat the oil in a pan and cook the pork on a medium heat to crisp up the crackling.

  8. While you are doing this cook the noodles (they should take 4mins to cook).

  9. Serve the drained noodles with the pork, marinade, fresh chilli, spring onion and coriander.

  10. Squeeze with lime.
