Chicken & Broccoli Rice Noodles

Ingredients

  • 200g chicken breast fillet

  • 100g rice noodle

  • 30g tenderstem broccoli

  • 1 garlic clove, diced

  • 1 tbsp soy sauce or to taste

  • 1 large egg

  • 1 tbsp olive oil

  • lime juice

Instructions

  1. Boil the kettle, once ready submerge the rice noodles with the water and leave to one side.

  2. Place the olive oil in a pan, whack the pan on a stove and set to a high heat.

  3. Butterfly your chicken breast, then dice the chicken into small pieces and season with salt and pepper.

  4. Place the chicken in the pan. Whilst the chicken is cooking cut the broccoli into halves.

  5. Once the chicken has been cooking for 5 minutes add the broccoli to the pan and the soy sauce. Give it all a good stir.

  6. Dice your garlic clove and then add to the pan once the chicken has been cooking for 10 minutes. Give it all another stir.

  7. Once the garlic has been in the pan for 1 minute remove the chicken, garlic and broccoli from the pan and set aside. Make sure the chicken is cooked before removing.

  8. Whisk the egg, then place in the pan and scramble for about 30 seconds.

  9. Drain the noodles and add to the pan as well as the chicken, garlic and broccoli.

  10. Stir for 30 seconds then serve.

  11. Drizzle the lime juice over the dish to taste then enjoy :)
