Chorizo & Courgette Pasta

Ingredients
100g pasta
62g chorizo
1/2 courgette
75g creme fraiche (50% less fat version)
50g stilton
Instructions
1. Stick the pasta on to cook, make sure its submerged in boiling water. It should take 15 minutes max.
2. Remove the skin from the chorizo and slice into small pieces. Then place on a pan to cook at medium heat.
3. Slice the courgette into thin circles and add to the chorizo. Keep turning the chorizo and courgette to avoid one side burning.
4. Once the courgette has softened reduce to a low heat and add the creme fraiche and stilton. Break the stilton into pieces as you add it.
5. Stir until the cheese has melted and a sauce has formed, this should take 1 minute.
6. Drain the pasta then add it to the pan, turning it in the sauce for 30 seconds. Then remove all ingredients from the pan and serve. Enjoy :)
