Mum’s Bacon Pasta

Ingredients

  • 500g Pasta

  • 1 tbsp Tomato purée

  • 2 x 400g tin of Chopped Tomato

  • A dash of dried Rosemary

  • 1 tsp dried Basil

  • 1tbsp Balsamic vinegar

  • A sprinkle of Black Pepper

  • A sprinkle of Salt

  • 300g of Bacon

  • 3 cloves of crushed Garlic

  • 2 Onions (finely chopped)

  • 1tbsp of Butter

Instructions

  1. Chop the bacon strips until small pieces then place in a hot pan and cook until they have browned.

  2. Then add the garlic, rosemary, basil and onions. Cook until the onions have softened, make sure you don’t burn the garlic and season with salt and pepper.

  3. Add the tomato purée and chopped tomatoes and reduce the heat to low so the food simmers. Let the sauce reduce until it’s nice and thick. This should take about 15 minutes. In a separate pan place your pasta in boiling water and cook.

  4. Drain your pasta and add in a bowl add the butter and balsamic vinegar to it and mix. Once the butter has melted add the pasta sauce and mix then serve. Enjoy :)
